Recipie of the week-3 Coffee Genoese Sponge Cake :)

Coffee Genoese Sponge Cake
Serves 8
Ingredients:
50g butter
4 large eggs
125g golden caster sugar
125g plain flour
1 level tbsp instant expresso granulesdissolved in 2tsp boiling water
For the filling
250g tub mascarpone
1 level tbsp instant expresso granulesdissolved in 1tsp boiling water
125g golden icing sugar,sifted,plus extra to dust
Procedure:
1.First,preheat the oven to 190 C
2.Grease and baseline two 18cm(7in)sandwich tins.
3.Put the butter into a bowl and melt in the microwave on high for 30 sec.
4.Put the eggs and sugar into the bowl of a freestanding mixer and whisk until pale and creamy.
5.Lift the whisk-the mixture should be thick enough to leave a trail.
6.Fold half the flour into the mixture
7.Mix Coffee into the butter and pour half around the egde of mixture.
Add remaining flour,then the rest of the coffee and butter.Gradually fold in.
8.Divide mixture between tins and bake for 25min until risen,firm to the touch and shrinking away from sides.
9.Upturn on to wire racks and cool.
10.Mix tgether the filling ingredients and use to sandwich the cake together.Dust with icing sugar.
